Ingredients:

Filling

1 large sweet potato
1/8 cup honey
1 egg
Pinch of nutmeg
Pinch of cinnamon

Crust

1-1/2 cups white flour
1/4 cup honey
1/4 cup vegetable shortening
3-4 T iced water

Cooking Instructions:

Preheat oven to 350

Cook sweet potato about 60 minutes. Cool and peel off skin.

Mix sweet potato with honey and egg, nutmeg and cinnamon. Set aside

Make crust:

Cut shortening into white flour and honey until crumbly

Add iced water 1 T at a time until mixture binds together

Knead until smooth

Roll out dough and cut into four (4) 5 inch circles to form the individual crusts

Line 4 inch foil pans with the crusts and pour in sweet potato mix

Bake 25 minutes

Serving Suggestions:

Cool before serving

Store well wrapped in the refrigerator

(Makes four individual pies, one for each paw.)
