4 medium onions, sliced
3 Tbsp. butter
2 Tbsp. flour
salt to taste
dash pepper
3/4 cup beef bouillon

1/4 cup sherry
1-1/2 cups plain croutons
2 Tbsp. butter, melted
1/2 cup swiss cheese, shredded
3 Tbsp. grated parmesan cheese

Instructions: |
Cook onions in butter, just until tender. Blend in flour, salt and pepper. Add bouillon and sherry. Cook and stir until thickened and bubbly. Turn into 1 quart casserole
Toss croutons with 2 Tbsp. melted butter and spoon on the onion mixture, evenly. Sprinkle with swiss cheese and parmesan cheese
Put in oven under broiler and broil for 1 minute until cheese melts.
Serve immediately.
