Combine catsup, sugar, soy sauce, vinegar, and wine in a saucepan and bring to a boil. Add cornstarch dissolved in water to sauce. Cook over low heat stirring occasionally, until sauce has thickened. Set aside and keep warm
Combine ingredients for marinade. Place pork in a shallow dish and pour in marinade. Turn pork to cover all sides. Let stand 20-30 minutes, turning occasionally.
Heat 2 tablespoons of oil in wok. Add ginger and pork, and stir-fry about 5 minutes. Remove pork and set aside. Add remaining oil to wok, and add carrots, pepper, onion, and mushrooms. Stir-fry about 5 minutes or until carrots and peppers are tender but still crisp. Add pork back to wok and stir-fry about 5 minutes. Add beef stock and mix well. Stir in sweet-and-sour sauce, and bring to a boil. Reduce heat to low, cover, and cook 2 minutes. Serve with rice.
