Prepare and freeze if you will be taking this camping. If you are doing it on your grill same day, there is no reason for you to freeze. In fact you can skip the pan frying and grill them done. Pound chicken just a bit to soften, cut into 1 " squares. Marinate in chopped garlic, olive oil (or sesame oil) and pepper. (I don't use salt, but you can).
Marinate shrimp in soy sauce, olive oil and pepper. While these are marinating for about an hour, chop onion and peppers into 1-2 inch squares, clean mushrooms with paper towel and leave whole.
Dip veggies in olive oil or melted butter sprinkle with favorite seasoning and put in plastic freezer bag and freeze. Cut potatoes in half. Dip in olive oil or butter, sprinkle with seasoning & freeze in bag. Remove husks and wrap corn with butter in foil and freeze. Quick fry chicken in pam or tbs of oil. About 5 minutes should be enough. Quick fry shrimp in separate pan same as chicken. Freeze. Put corn on fire as is wrapped in foil. Takes about 20 minutes depending on who builds the fire.
For camping, pack all frozen food in cooler and take to campsite. When fire is hot, alternate veggies, shrimp and chicken on skewers (or sticks) and lay across fire. You will have to learn to build your own fire. Serves 2 if you can keep it all on the sticks! |
