Cooking
Instructions:
Mix the sugar and flour and then cut in the butter until the mixture is crumbly. Form into a ball and kneed until smooth. Place ball on to a ungreased cookie sheet and press slowly into a flat 8 inch cookie. Use your finger tips to scallop the edges and with a fork, pierce deep enough to outline 16 wedges. Bake at 300 degrees 40- 50 min until edges are slightly brown and the middle set.

Comments:
When I make many many short breads. I roll the dough to a quarter inch and cut smaller cookies out and bake at 375 up to 15 minutes or until the edges are just turning golden brown. I like the slower way better but it takes too long to make dozens of them.
The last thing is cutting in the butter. The first time I did it, it took a half hour to do by hand. My stand mixer can do a double batch in half that time but a food processor can do a single batch in about a minute and leaves much less kneading to do.
