2 1/2 c. flour
1/4 tsp salt
1 c. butter
i egg yolk
2/3 c. sugar
1 tsp vanilla
1 c. finely chopped almonds
Chocolate Dip
12 oz. semisweet chocolate pieces
6 tbsp butter
2 tbsp hot water
non-pariels or finely chopped nuts (optional)
Cooking Instructions:
Cookies

1. Beat butter, sugar, egg yolk, and vanilla until light and fluffy.

2. Stir in nuts, flour, salt. Work with hands until you have a smooth dough.

3. Make 2 rolls, about 1.5 to 2 inches in diameter. Wrap in plastic wrap and freeze.

4. Heat oven to 350F°. Lightly grease cookie sheets.

5. Using a very thin knife, slice cookie dough 1/4 inch thick and place on cookie sheet. Bake for 8 to 10 minutes. Do not let brown.

6. Cool on a rack

Chocolate Dip

A. In a small sauce pan, melt chocolate and butter, stirring often. Stir in hot water.

B. Dip each cookie, halfway, in chocolate. Place on waxed paper. Sprinkle with non-pariels or finely chopped while still soft.
Additional Comments:
I use a food processor to make the dough. It's quicker than an electric mixer and keeps the gluten in the flour from forming. I turn the processed dough into a bowl and use my hands to create a smooth dough.

I also use an air backed, non-stick cookie sheet that I do not grease.

There will be some chocolate mixture left over. I make fudge with this.
