Ingredients:
1 1/2 lbs of Pork Chops
1 tsp extra virgin Olive Oil
8 oz sliced fresh mushrooms
1 can chicken broth
5 tsp cornstarch
1 Tbsp Tarragon
8 oz Swiss cheese (processed not from the deli. It doesn't melt correctly)
Cooked rice of preference
Garlic Powder
Black pepper
Seasoned salt of preference
Cooking Instructions:
In a large skillet which has been pre heated, sear both sides of the seasoned (garlic pepper and seasoned salt) pork chops quickly to seal in juices. Grease bottom of a 13 X 9 inch baking dish with olive oil and place pork chops in the bottom of the baking dish. Cover chops with mushrooms and set aside.

In a 2 cup microwave-safe measuring cup combine broth, cornstarch and tarragon. Microwave mixture on High for 3-4 minutes, stirring twice until thickened and bubbly. Stir in cheese until melted. Pour mixture over mushrooms and chops. Bake loosely covered with foil for 30-35 minutes at 350 degrees or until pork is cooked through. Serve hot on a bed of cooked rice.

(I double the gravy mixture as we like more a lot of gravy)
