Ingredients:
2 C. scalded milk
3 Tbsp. of sugar, divided
1 Tbsp. salt
? C. Margarine
? C. warm water, 105 to 115 degrees F
2 packages of yeast
7 to 7 1/4 C. flour
2 eggs, slightly beaten
Cooking Instructions:
Add the warm water to the yeast with 1 tsp. of sugar to proof. Heat the milk until bubbles form around the edges. Add the rest of the sugar, salt and margarine. Cool to lukewarm. Then combine with the beaten egg, yeast, and milk in a large bowl. Then add half the flour and mix until smooth with a wooden spoon. Add the rest of the flour gradually until the mixture leaves the sides of the bowl. Turn out on a floured surface, cover with the bowl, and let rest for 10 minutes. Kneed for 10 minutes or until smooth and blisters form. Place in a greased bowl. Turn over and cover and let rise for an hour. Punch down, form into two loaves (braided or not) or one large round babka and let rest. Place it in two 9?x5? greased loaf pans or one large greased round pan. Cover with a towel and let rise an hour. Bake at 400 degrees F for 30 to 40 minutes. Before baking, you may brush with egg white or yolk. Remove the bread from the pan and cover with a damp towel to make a nice crust.
