Difficulty: Easy
Ingredients:
1 1/2 cups unbleached all-purpose flour
1/4 cup whole wheat flour
3/4 teaspoon salt
3 tablespoons sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda

2 tablespoons unsalted butter
1/2 cup raisins - plumped and drained
1 tablespoon caraway seeds (optional)
1 cup buttermilk
non-stick cooking spray
flour or sugar for dusting
Cooking Instructions:
Preheat oven to 400 F.

Use a clay flower pot with a diameter of 7 inches approximately and a height of 6 to 7 inches. Line the bottom with a circle of parchment and spray the interior with non-stick cooking spray.

Mix dry ingredients together. Cut in butter to make a crumbly mixture. Stir in buttermilk to make a soft dough. Knead briefly on a lightly floured board to make a stiff dough.

Shape into a round ball and gently place in flower pot. Place on a baking sheet. Bake 25 to 30 minutes until well browned.

Cool then flip loaf out of flower pot to finish cooling. Replace in pot and wrap.

Additional Comments:
This is nifty. Bake a small soda bread in a clay flower pot, cool and wrap in cello paper (green to be sure). Add a ribbon or two and you have a delicious gift to go (and no baking pans to wash up) >
