Preparation Time: 15 minutes
Difficulty: Easy
Ingredients:
Cod Fillets (one per person)
1 large sweet onion, sliced 1/4" thick
2 lemons, one sliced...one halved for squeezing
1/4 cup butter or margerine
1 cup chicken broth
Italian Seasoning
Salt & Pepper
1 packet Knorr Bernaise sauce mix
1 heaping tbsp. fresh Tarragon, minced
Cooking Instructions:

Pre-heat oven to 350F. In appropriately sized casserole dish, melt stick of butter. Add chicken broth. Place sliced onion to cover bottom.

Season fillets with salt, pepper and Italian Seasoning on both sides. Place fillets on top of onion slices. Squeeze lemon juice over fish. Top fillets with slices of lemon.

Cover with aluminum foil and cook 40 minutes or until easily flaked with fork.

While fish cooks, follow Bernaise sauce instructions. Add minced Tarragon and bring to slow boil, whisking until sauce is thick enough to coat the back of a spoon. Season with salt to taste. Note: can be made several hours ahead of time and refrigerated to allow Tarragon to enhance the flavor of the packaged sauce. Re-heat when ready to serve.
Serving Suggestions:
Serve fish with or without onion. Discard liquid and use lemon slices as a garnish if desired.
