| Ingredients: |
3-4 cups Tomatoes (several types, sizes, colors) diced 3-4 garlic cloves 2 eggplant 6-8 peppers (several types, sizes; hot, mild and sweet) 4 big squash (2 zucchini, 2 yellow) |
6 scallions, chopped Huge bunch of fresh herbs (I used: rosemary, oregano, lemon thyme, basil, chives, parsley and cilantro) Olive oil Salt & pepper |
| Cooking
Instructions: |
1. Rough chopped the tomatoes, cooked them for about 10 minutes with the garlic then used an immersion blender (that way I didn't need to peel the tomatoes). Set aside. 2. Thickly sliced the eggplant. Cut the squash lengthwise in half. Tossed with olive oil. Placed on grill with the whole peppers. Grill and turn until everything had nice grill marks. 3. Cut eggplant, squash and peppers into bite size pieces. 4. Added everything to a large pot and cooked (covered) for about 20 minutes. Added salt & pepper to taste. |
