Instructions: |
Directions Preheat the oven to 375 degrees F.
Melt the butter in a large skillet over medium-high heat. Add the shallots, mushrooms and a pinch of salt and pepper. Saute for 2 to 3 minutes. Add the heavy cream and heat until the cream is just beginning to bubble, stirring often. Turn the burner off and stir in nutmeg, mayonnaise and spinach. Adjust the seasoning with salt and pepper, to taste. Pour into a casserole dish and sprinkle the top evenly with Parmesan cheese and paprika. Bake until golden and bubbly, 15 minutes.
Alternatives: •Omit the nutmeg and use dried mustard and tarragon (my favorite) •Omit the nutmeg and use rosemary and oregano. Since these herbs are stronger flavor also substitute garlic and onions for the shallots •Mix Parmesan in with the spinach and top the casserole with French's Fried Onions
I usually prepare this the day before and then I preheat it in the microwave (to room temp or a bit higher) and then pop it in the oven as soon as the turkey comes out.
