Preparation Time: Chopping takes awhile. Plan on 4 hours for Salmon.
Difficulty: Average
Ingredients:
1 Filet of Fresh Wild Salmon
1/2 Pound of Peel and Eat Shrimp
3-4 Jars of Lime Juice
Fresh Carrots
Fresh Celery
1 Can of Mandrine Oranges
1 Can of Pineapple Chunks
Small can of Chopped black Olives
2 Avacodos

Fresh Parsley
**FRESH CILANTRO** Key To whole recipe
Fresh Hot Peppers (Pick your heat level)
2-3 Fresh Green Chilis (Not Cooked)
1 small red or white onion
2-4 Fresh Tomatoes (Red and Yellow Mix adds to presentation)
Cooking Instructions:
Cut Salmon filet into dime-nickle size pieces. Marinate in a baggie or container of lime juice for at least 3-4 hours or until pink meat turns slighly whiter. This is the cooking process. Make sure the meat is fully covered in the lime juice. The Acid in the juice "cooks" the salmon.

Cut and remove seeds from the fresh green chilis and hot peppers. Use Care when cutting your hot peppers. Use gloves or wash hands immediately and please don't touch your eyes or face. NO ITCHING!

In a food processor (pulse chop) or if you do not have one finely chop green chilis, peppers, carrots, celery, and onion. In a bowl add your chopped veggies and chopped black olives. Chop Tomatoes, but it is important to first remove the seeds and pulp of Tomatoes. The mixture becomes to runny if you don't remove pulp.

Drain juice from Mandrine and Pinapple Cans. Chop into smaller pieces if needed. Chop Avacodos into small chunks. Wash, remove tail, and cut Shrimp into smaller pieces. Add all to veggie mixture. Add about a handfull of the freshly chopped parsely. The Fresh Cilantro is the Key to all of this. I use most all of the leaves from one clump of Cilantro.
Finely chop and add to mixture. Once Salmon is "cooked" drain from lime juice and add to mixture. A Tablespoon of Olive oil can be added to help bind the ingredients but this is not necessary.

Serving Suggestions:
I find that you need to start slow with minimal amounts of each ingredient because this starts to really build up after all is added.

Use as a salsa for dipping or I find that it is really good over salad in replcaement of salad dressing.
Additional Comments:
Seafood/Fish can be substituted. Use any type of fish you want. Salmon is just what I prefer. Just make sure to cook in lime juice if it is fresh.

This is very healthy as everything is fresh.

It is VERY important to keep mixture as dry as possible. If not all used in one day the mixture will build up liquid. Drain daily. >
