Preparation Time:
Difficulty: Easy
Ingredients:
1 Cup pecans (ground)
2 Cups flour
2 sticks butter (NOT margarine)
1/4 Cup powdered sugar
1 tsp vanilla
additional powdered sugar
Cooking Instructions:
This goes faster with a food processor.
Part 1
1. Place flour and powdered sugar in food processor.
2. Pulse to mix.
3. Add pecans and pulse until pecans are ground.
4. Add butter and vanilla and run food processor until mixed.
5. Wrap dough in plastic wrap and chill.

Part 2
1. Set oven temperature to 325.
2. Make small balls out of the dough and place on ungreased cookie sheet. You should be able to get 6-7 balls on each row and fill one cookie sheet.
3. Bake cookies for approximately 30 minutes. I like them to get just a touch of tan.
4. While cookies bake, set up wax paper and cooling racks. Get the additional powdered sugar and place in a bowl.
5. Remove cookies when done, and let them cool a few minutes.
6. Put 3-4 cookies in the powdered sugar and roll them around to coat the cookies. Then place on rack.

That's it.
Serving Suggestions:
If you mix the dough by hand, let the butter soften a little first. This makes a very stiff batter.

I've used a bag instead of a bowl for coating the cookies, but the cookies tend to break when you shake the bag. Besides, when I'm done I can lick the sugar off my fingers, but ONLY when I'm done.!!!
