Difficulty: Easy
Ingredients:
2 tablespoons of bacon drippings or oil
1-1/2 cups uncooked long grain rice
1 8oz can of tomato sauce
2 -3 cups of water
1/4 teaspoon garlic salt or 1 clove garlic minced
1/2 teaspoon onion salt or 1 small onion minced
Cooking Instructions:
Heat bacon drippings or oil over medium heat in a large skillet

Add rice, stirring constantly until rice is lightly browned (be careful not to burn rice)

Turn burner off. Add tomato sauce, water, onion, garlic.

Cover immediately. Turn burner to low and simmer until all liquid is evaporated and rice, onion, garlic is tender -- approx 25 - 30 minutes. Add more water only if necessary to prevent drying.

Serve immediately.

Makes 4 - 6 1/2-cup servings.

Note: 1/2 cup of diced green or red bell pepper can be added to rice before simmering if you like bell pepper in your rice.
