Put sugar, water and corn syrup in a saucepan; cook, stirring only until sugar is melted, until temperature reaches 290 degrees or until a few drops of the mixture become brittle when dropped into cold water.
Remove from heat; add coloring and flavoring. Stir only enough to mix color and extract or candy will sugar.
Grease molds or bottom of level pan with mineral oil; it gives hard candy an excellent glaze.
Make lollipops quickly by dropping syrup from a spoon into greased molds or flat pan.
Press ends of wooden skewers or picks into lollipops immediately after pouring.
As soon as they are firm, loosen lollipops from pan or mold. If allowed to remain on pan too long, they may crack while being removed.
